Selena's Soup

Selena cooked dinner for us tonight - her version of minestrone soup. She looked at her Grandma Ila's recipe, but some of the ingredients did not appeal to her. I told her that was the beauty of being the cook, you can make it however you want. On a previous visit she made th soup for Grandma Ila and Aunt Lia. I warned her not to tell them she had made minestrone because they would surely let her know she had left out some very important ingredients. We named it Selena's Soup and everyone was very impressed.

Recipe:
Selena started by browning small cubes of beef chuck. She added carrots, celery, zucchini, potatoes, green beans, kidney beans, canned tomatoes, beef broth and Italian seasonings. Simmered for about 45 minutes, then added small ziti pasta and cooked for another ten minutes. She topped the soup with parsley and Parmesan cheese - and of course, homemade bread.

Thank you Selena, it was delicious. I'm looking forward to hearing about the meals you prepare in your new apartment. (She has already decided to make the potstickers for her housewarming.)
