We started by cutting circles out of wonton wrappers. Our filling was ground turkey, minced green onions, minced bamboo shoots, minced fresh ginger and soy sauce. It was a little dull, so we're going to try again later in the week using pork and spicing it up a bit. We put a little filling in the middle of the wrapper, brushed the edges with water, folded the in half and then pressed the edges together making little pleats.

And here's a close-up pic to show Jeff what a good job we did forming them free-hand:To cook them, we heated some oil in a non-stick frying pan. Put the potstickers in seam side up and browned for about 3 minutes. Then added some water, covered the skillet and cooked over low heat for another 3 minutes.
We were pretty proud of our results:
