Yellowbanks - Shrimp Tacos

We spent a few days anchored at Yellowbanks. Saturday night we bbq'd for Joe & Jeri, Staff & Jane and Matt. Jeri's artistic shot of Matt, Staff & Jane through a porthole on Chata.

Our menu was grilled flap steak, shrimp tacos with poblano-avocado salsa, peach salsa, pico de gallo, grilled tortillas and rice.

The shrimp taco recipe (from Weber's Real Grilling) is a great summertime recipe for the bbq. Grill a husked ear of corn, some green onions and a poblano chile. Peel the chile, cut the kernels from the corn and chop the green onions. Add diced cherry tomatoes, chopped cilantro, minced garlic, lime juice, salt and pepper. Brush the shrimp with oil and season with salt and pepper. Grill the shrimp and the tortillas. Fill the tortillas with salsa and shrimp. Serve warm. This is so yummy - Sarah & Jeff, I think we should make this at Catalina next month.

I didn't get a picture of the tacos, but here's one I scanned from the cookbook.
