For Father's Day, my step-brothers Jon & Paul and their kids came to visit. It was a great surprise for Dad.
Paul with his kids Malia & Colin and Jon with his gang - Hannah, Luke & Jake:
Also joining us for lunch that day were Ma, Laura, Michelle, Frankie, Carrie, Carla and Leo. On the menu - BBQ Ribs, Potato Salad, Baked Beans, Corn on the Cob, Rolls and a Lime Tart. Now we're talking Summertime!!
The next weekend our very dear friends Jan & George came for an overnight stay. They have been cruising in Mexico, Central America and South America aboard their sailboat Clair de Lune for the past seven years. Their boat is currently anchored in Panama and we hope to fly down to visit with them in the spring. Jan & George only make it back to the U.S. about once a year and some of our dock friends hadn't seen them since they left in 2003, so we had a very fun reunion/cocktail party:
Last weekend Bobby & Cynthia had a dock party to celebrate their wedding anniversary - 47 years!!
Cynthia and her sister, Sue, made all different kinds of Lebanese food. My contribution to the table was individual Nectarine and Blueberry Tarts:
For the crust:
In a food processor, mix together 10 oz. all-purpose flour, 1/2 cup sugar and 1/2 tsp. salt. Add 10 oz. cold unsalted butter, cut into small pieces and pulse several times in the processor until the butter is incorporated into the flour and pea-sized. Add 1/4 ice cold water and pulse until combined. Do not overwork the dough!
Wrap the dough in plastic wrap and refrigerate for a couple of hours.
For the filling:
Cut 4 nectarines into slices and place in a bowl with 3/4 cup blueberries. Add to the fruit 1 T honey, 1 T. lime juice, 1/4 cup sugar, 1/8 teaspoon ground ginger and 1/2 teaspoon ground cinnamon.
To assemble:
Cut the dough into 2 pieces. Roll out 1 piece of the dough and cut into 4 to 5" rounds. Spoon fruit filling into the center of the rounds. Fold the edges of the dough in towards the fruit, but do not completely cover the fruit. Brush the edges of the dough with cream and sprinkle with sugar.
Bake at 350 degrees for about 30 minutes or until the crust is golden brown and the fruit mixture is bubbling.
And the next day we had a surprise visit from Nick, Millisa and our adorable great-grandchildren (yes, I said great! grandchildren) - Mariah and Nick Jr:
We love summertime!!
