Pie of the Month - Strawberry Rhubarb

One of the gifts I gave my parents for Christmas last year was a promise of a pie every month of the year. Here was the monthly menu I gave them:

This month's pie was Strawberry Rhubarb - one of my Dad's favorites. 

 The filling was strawberries, rhubarb, brown sugar, white sugar and cornstarch.

 Dad loved his pie and said it was the best he'd ever had!

However, Ma informed me that she does not care for rhubarb so asked if I would make her Strawberry Shortcake instead. And she didn't want the spongy kind of shortcake she wanted the old fashioned biscuit type. I told her she was a spoiled brat and asked if she would like fresh whipped cream with her strawberries - but of course she did!

I tease Mom about her special requests but the truth is I'm so happy to cook anything that she enjoys and that makes her happy.
