Halloween snuck up on us this year and we hadn't made any plans for a party. Friday morning Bonnie & I decided instead of a dock party we would have Happy Hour aboard Poseidon and instead of costumes everyone should wear a hat. With rain predicted and our plans being so last minute we were surprised when we ended up with a good turnout and lots of yummy treats. I made Cheese Puffs with Pancetta. First I cooked diced pancetta, drained and set aside. Next I brought milk, water, butter, salt & pepper and a cayenne to a boil and then stirred in flour until a ball formed.
Then I took the dough off the heat and let it cool for about 15 minutes before adding eggs, stirring between each egg until completely incorporated (it seems like that will never happen but don't give up, eventually it all comes together). Next I added the pancetta, cheddar cheese and chopped green onions.
I used a pastry bag to pipe the dough onto cookie sheets but you could use a teaspoon to make small mounds.
I baked the puffs in a 425 degree oven for 25 minutes. They get nice and crispy on the outside and light and airy inside - fun little snacks!
